This Rainbow Breakfast Sandwich is super easy, colorful, filling and heavenly. Making a nutritious filling breakfast does not always have to include cereal or the usual bagel. Although oatmeal is excellent for you, sometimes I like a mouthful of different textures. Step out of your breakfast comfort zone and try something new. This is a great start to a great day!
This is my 3rd recipe in honor of the victims and families of the Orlando tragedy. The idea of making recipes that represents a rainbow is easier then I imagined it would be. I am working to share fun recipe and food ideas that are rainbow themed. Together we can all enjoy rainbow recipes and food options remembering to care for the individuals that inhabit this earth, peacefully.
It is amazing how delicious colorful vegetables and fruits can be. Try this recipe for breakfast, lunch, dinner or yummy snack.

- 1 tomato , sliced
- 1 orange pepper , sliced
- 1-2 tablespoons hummus
- 1/2 avocado , sliced
- Red onion , pieces
- 1 small purple beet , sliced
- 1 Gluten free bread , toasted
- Cilantro pieces
- Salt and pepper
Arrange all ingredients onto toasted gluten free bread, starting with the hummus.
Top all veggies with cilantro, salt and pepper
